Mexican Breakfast Burrito Recipe with Shrimp

Here’s a great authentic Mexican breakfast burrito recipe you make at home in about a half hour! Burritos, of course, are a super delicious Mexican breakfast treat you can make when you have the time and you want to start the day with a tasty, healthy meal you get to eat with your hands!

A lot of breakfast burritos use bacon, but many Mexican vendors use chorizo sausage instead and I want to share this authentic Mexican version on the breakfast burrito recipe with you here, so you can see how they’re normally served south of the border, and give you an idea of the Mexican breakfast deliciousness that’s in store for you if you pick this off the menu at the restaurant on your next visit to the authentic Mexican restaurant in your area!

Cook Time: 30 Min

Ingredients (serves 5):

100g chorizo sausage
20 shrimp (small size)
5 eggs
1 (16 ounce) can refried black beans
10 flour tortillas (big ones: 30cm [12″])
100g queso asadero (essentially “Mexican grilled cheese”)

+ pico de gallo salsa, to dress them

Directions:

Start by making the pico de gallo salsa.

Also begin by heating up your refried beans in a pan.

Peel and devein shrimp, then chop into cubes.

Grill the chorizo in a sauce pan. Once it’s crispy, add the shrimp cubes to the pan and the egg mix immediately after those shrimp. Remove while the eggs are still a bit runny. You don’t want them to be too stiff for this authentic Mexican recipe.

In another pan, heat up your flour tortillas. About 10 seconds per side. So put the tortilla in the pan for 10 seconds, flip it, let it heat up for another 10 seconds, then remove to plate and cover with a layer of refried beans, then add a portion of your egg/chorizo/shrimp mix to the burrito and fold it. There are many ways you can do this, but here’s the way I recommend (the burrito in this vid looks disgusting, but his folding technique is solid):

And then pig out and eat them with your family while they’re warm! Mexican breakfast burrito recipes like this are popular in Mexico City and other big urban centers in the country where people are busy and (usually) just buy them from the street vendor for a quick Mexican breakfast eat. Outside of those places and the odd specialty street vendor in the tourist hot spots, they’re actually mostly an American invention and aren’t served very often in the Mexico. But when burritos are served, this is usually how they are done!
