Easy Mexican Recipes: Guacamole Recipe

It’s hard to imagine Mexican cuisine without also picturing guacamole in there somewhere because it is one of the staples in authentic Mexican food.  The famous guacamole plays a role in nearly every nook and cranny of authentic Mexican recipes, and I have plucked a tasty one from the plethora of easy Mexican recipes to show you how to make this delicious dip.

Originating in Mexico, the dip is made from avocados and is normally made by mashing ripe ones with a molcajete (or a blender in modern times) with salt and a few other ingredients according to the preferences of the cook. According to some sources, Aztecs were making guacamole as far back as the early 1500’s, so when you taste this classic authentic Mexican recipe, you’re eating a food that has been refined for half a millennium!  When you taste guacamole, you’ll understand why this easy Mexican recipe has survived the ages.

The easy Mexican recipe that is guacamole is one that virtually everybody loves: it’s easy to make, it’s colorful, and it is versatile: it can be used as a snack with chips; a garnish on quesadillas, tostadas, fajitas, or anything really; and it can also be used as a sauce in tacos. So it’s versatile and tasty, but it’s also not spicy, which is another big reason why it’s loved by nearly everybody who tries it. So here’s an authentic recipe for one of the most delicious and easy Mexican recipes around:

(serves 8 muy hungry people when used as a sauce/salsa for tacos)

– 3 avocados
– 3 branches of cilantro
– 1 small jalapeño
– 1/4 small while onion
– 1 lemon
– 1 tbs olive oil (don’t use lard for this!)
– salt and pepper


Cut the 3 avocados in half and extract the seed, saving one of them for later in the recipe…

Remove the avocado from the shells and put in a bowl.

Mash the avocado in the bowl.

Chop up the cilantro and add to the mashed avocado

Chop the chile and add to the bowl.

Chop the onion into small pieces and add it.

Squeeze your lemon into the bowl.

Add 1 tbs of olive oil, along with a dash of pepper and few shakes of salt, depending on how much you typically like in your food, and then mix it really well. Place the seed you saved from one of the avocados earlier in the center of the bowl to help preserve the guacamole, and then serve and enjoy with one the many taco recipes out there, and blow your friends’ minds with another one of your flavorful easy Mexican recipes!

An important precaution for this easy Mexican recipe: guacamole decomposes and goes bad VERY quickly, so it’s important you serve it right after preparing it. Do NOT ever put it in the refrigerator because it will turn brown quickly and go bad. If you need to let it sit for a while, place the avocado seed in the bowl with the guacamole and then cover your tasty authentic Mexican food up with saran wrap and let it sit on your counter top, instead.
